Simple and sweet vanilla and strawberry cupcakes with buttercream frosting..
I got a request yesterday for some vanilla and strawberry cupcakes with vanilla and strawberry buttercream frosting from Mr Eng 
As the butter taste of the buttercream frosting is quite strong i decided to cut down on the butter used in the vanilla and strawberry cupcakes so that the butter taste would not overwhelm the tastebuds.
I was quite happy with the modified cupcake recipe as the cupcakes turned out very nice and moist and yet fluffy… Plus it’s so much healthier than other cupcakes since i used much less butter and replaced it with yogurt instead so that the cupcake would retain it’s moistness… that is if you discount the butter in the buttercream frosting :p
