My brother’s birthday was coming up and as usual we would be having a family dinner to celebrate his birthday. Anyway, i remembered his girlfriend had mentioned that he wasn’t much of a cake fan, but loved blueberry cheesecake.
So i decided to make him a blueberry cheesecake to celebrate his birthday. The problem was.. cheesecake has always been very scary for me as my cheesecake has always always cracked. So i was a little worried when i decided to go ahead and make the cake for him. At the back of my mind, i was thinking that if it did crack.. it’s only family right.. so doesn’t matter… but that didn’t relieve my anxiety one bit.
So after researching to see what was the main reason behind cheesecake cracking, i realised it’s either cost the oven is too hot, or the cheesecake is overbaked, or you overbeat it when mixing all the ingredients in. Argghh…

Well.. i just bit my tongue and just decided to go ahead to bake it and just keep my fingers crossed that all would go well. Once i placed the cake into the oven, i spent nearly every 1/2 hour checking on the cake and hoping and praying that the cake wouldn’t crack. When i finally deemed the cake cooked and took it out i was ecstatic to see that it hadn’t cracked!! I loved too the look of the blueberry syrup ripples that i had going through the cake as well. Isn’t it gorgeous!
To oomph up the blueberry flavour of the cake, i decided to layer of blueberries on the top of the cake but as i didn’t want the blueberry syrup to drip down the sides of the cake and ruin the look of the cake, i made a little whipped cream border around the edge of the cake to act as a stopper. Then i slowly poured on the blueberries and the syrup on the top of the cake after the cake was well chilled.
The cake turned out fabulous and i was really happy with the way it turned out!

As my FIL’s birthday was coming up and since his favourite cake was a blackforest cake, i decided to have a go at making one for him.
I’ve not made such a cake before and decided to do some extensive research online to see if i could find any recipes for making one. After looking at a couple of hundred recipes… i noted the common themes, selected a few that i thought would work best and combined them together.
However, i needed to get hold of some kirtsch first to do a proper blackforest cake. After going to a couple of places, i finally found a bottle of kirtsch at Cold Storage. However the price was definitely out of my price range and considering the fact that i was probably only going to make this recipe once, i thought i’d see if i could find some other alternatives first. In the end, i settled on using a mixture of brandy and kirtsch flavouring i found, i started to bake.

This turned out to be a monster of the cake with 4 layers of 9″ round chocolate sponge cakes soaked in kirsch flavouring, brandy and boiled down cherry syrup. Each layer of cake was sandwiched with oodles of whipped cream, and of course lucious cherries, with additional kirsch, brandy and cherry syrup. After all of that, i covered the whole cake with another layer of whipped cream and to amp up the chocolate flavour, i then covered the whole cake with rich chocolate shavings.
I couldn’t get hold of any fresh cherries so could only accent the whole cake with some canned ones. Next time i definitely would change these with fresh cherries instead.
The final product stood more than 4 inches tall and to date is the biggest cake i’ve ever made. The cake was also delicious with the cherry syrup, kirsch and brandy helping to keep the cake moist and delicious. The cake was quickly gobbled up and was demolished with only crumbs left at the end of the day. A totally yummy dessert!! My only regret was that i didn’t manage to snap any photos of what the inside of the cake looked like after it was cut :p

The 4th of February was my Aunt-in-law’s birthday and i had promised to do up a birthday cake for her for her party. Aunt Ruby is someone who loves singing karaoke and since i’ve known her, has always celebrated her birthday by renting a karaoke room at a community centre and having all her friends over to sing karaoke.
Aunt Ruby and her sister’s are not the typical karaoke singers by anyone’s standard. She and her sister’s actually used to be singers and have even acted in a movie show before. Not only that, their oldest sister who unfortunately has passed away had even produced an album before!! So if you are expecting out of tune singing at this gathering, guess again. Every one of Aunt Ruby’s friends are singers who are all armed with powerful voices!

Other than singing karaoke, Aunt Ruby enjoys drinking on her birthday so alcohol is always part of the pary
So to combine her 2 favourite pastimes of karaoke and drinks, i decide to do a relatively simple cake with Aunt Ruby holding a microphone and singing, with her other hand holding a beer, and of course having some Hennessey bottles and beer cans just around her. The Hennessey bottle was only about 2 cm in height and was really tiny so painting on the Hennessey name on the bottle was a real challenge considering how tiny it is. The beer cans were another huge challenge as they were even smaller than the bottle and were only about 1cm in height.. yikes!! I was wondering what the hell i was thinking when i realised how tiny the bottles and cans were and that i still had to paint on the words! But in the end, my hand held steady and i thought the they turned out fantastic
When my hubby saw the final cake, and took his first look at the figurine, he commented that the figurine actually looked exactly like his Aunt Ruby, down to the spectacles, rosy cheeks and highlights in her hair!! Yay!! Success!!
Aunt Ruby was really happy with the cake so that was thanks enough
The combination of the alcohol and karaoke was spot on and elicited lots of laughs and teasing at the party from Aunt Ruby’s friends who said i made her out to be a “jiu gui” :p… opps.. hee

Charis recently attended Wee Ling’s daughter’s birthday celebration for which i did the cake. After her first taste of the cake, she fell in love with the taste and texture and obtained my contacted from Wee Ling. Shortly thereafter, she contacted me to ask if i could do a cake for her father’s upcoming 70th birthday.
I of course agreed and after Charis had a look through my gallery, she asked if i could do a 9″ cake with a Comfort cab car as the central design of the cake. The reason was that her father drives a blue Comfort cab and the cake would be representative of him and his car!
After my last experience with making a car themed cake, i had learned some lessons from there and i hope i’ve managed to improve on my car modelling skills!! haha… well.. at least i think i did :p
I do hope that Charis’s dad enjoys the cake and here’s wishing a very Happy 70th Birthday and i hope he has many more to come!

I know it’s been ages since my last post but i’ve been super busy this past week. :p So please do forgive me for my long absence.
Anyway, i got a call from an old friend of mine last week asking if i could do a special cake for her. The cake was for a special dual birthday celebration for her Uncle and Auntie. After some discussion with my friend, i found out that her Aunt and Uncle like to take road trips in their Mitsubishi Evo 9 and the places they usually visit is Malaysia and Bangkok. The only request per my friend was that the cake had to have the Evo 9.

I decided to keep things simple and make it so that the Evo 9 looks like it’s travelling on a little road to indicate the road trips that the Aunt and Uncle like to take. So that decided, i started on the Evo 9 car topper. From doing this little topper I now have a new found respect for people that do car cakes. No matter how many times i re-did this topper, the final product came out looking nothing like an Evo 9 except for it’s colour.. haha… My conclusion… I am hopeless at car toppers! haha…

At any rate, this is the close up of the Evo 9.. quite a lame attempt right ;p .. i would say it’s not one of my best work.. but overall i thought it turned out ok. Oh.. and guess how much this cake weighed?!… A whopping 3.3kg! Crazy huh! This was one heavy cake! :)

Today is a very special day for a special someone…. it’s my husband’s grandma’s (aka Mama’s) birthday! She is turning 88 this year and to look at her, you wouldn’t even think she’s a year over 60! Her vivacious character, booming voice and sharp mind make her someone to reckon with. :) Plus do you know she successfully plays the stock market!!! She’s the only grandma i know that actually plays the stock market and consistently makes money at it!! haha… She trades better than most people i know come to think of it
Mama… how about some stock tips!!

Well.. as this was her 88th birthday, I wanted to surprise her with a special birthday cake. As I knew that one of her biggest passions is her garden, it was easy enough for me to decide on the theme of the cake. But i wanted to go a step further an include some subtle elements into the cake that makes it uniquely her cake. First off, it was to include the specific flowers or plants in her garden into the cake. Her favourites included ferns, ixora’s, and one of her favourite plants, the Anthurium. In addition she has a wooden bench that she usually sits on to admire and appreciate her own flower garden. Every now and then, her favourite pet, Tyra, would join her. Tyra’s a little Jack Russell that just never seemed to grow. I would describe her as one tiny, sly, evil and scheming and dog i tell you. You can literally see her thinking up her little schemes with just one look from her. I will see if i can get a picture posted up of what she looks like so you can see what i mean :p Shucks.. couldn’t find any.. put here’s a picture of the real Mama holding Tyra
Well, based on all the elements, i decided to make a 2 tier cake, with grandma sitting on the top of the cake on her bench with Tyra in her arms and her being surrounded by all her glorious flowers on the bottom tiers. After confirming the design, i began work on the flowers and my little miniature grandma figurine or “mini Mama”. As i know that Mama usually wears baju’s and has a bright red one with white flowers splashed all over it, i decided to make my mini Mama wearing that baju. I then added the little details such as her accessories like her little jade bangle, watch, earrings and rings. Once those were completed, i started on the bench, and added some wood prints on the bench to give it that woody look. This in itself took 2 days for me to complete. Thinking everything was all set, i left them out to dry.. lo and behold it started raining.. and raining and raining for 3 days consecutively!!!! Aww man…. i could see my little figurine starting to sink into itself with the high humidity.. wahhh!!!! Praying for the sun to come out or at least for it to stop raining, i kept my fingers crossed the next few days and finally it stopped raining and though there was no sun, the humidity did lighten up a little allowing my little “mini Mama” to dry. Whew!! Here’s a close up picture of my completed mini Mama.. so does it look anything like the photo above?
So now i only had left to bake the cakes, tort them, frost them and cover them in fondant, which though it sounds easy, takes me about 1 day to complete. The part i hate most, kneading the colour into a huge chunk of fondant… it’s a serious work out on the arms and wrists!! haha.. oh well.. at least i get to work off some of the calories that comes from eating the chunks left from levelling the cake :p
Well.. after all that work, this was the final product. Mama was very happy when she saw it and you can see her in the picture below pointing out all the little things that made the mini Mama recognisable as her

First off for this post, i really have to thank a very special girl for helping me to spread the word about my cakes and recommending me to her friends. This person is Wenqi, who had the honour of being the first person who ordered my first offical cake from me. After seeing her cake, 2 of her other friends have also approached me to do their 21st birthday cakes for them. Valerie’s pyjama and cow themed cake was one and well… this is the other.

Joy, a friend of Wenqi’s contacted me shortly after Wenqi’s birthday and asked if i could do a birthday cake for her too. Her 21st birthday was coming up shortly and she wanted a unique and fantastic birthday cake to celebrate this special day. After having several discussions with her, she decided on doing an Angel themed cake. Her specific request was for a central Angel topper for the cake and have the Angel holding a rose. After some brainstorming, and to distinguish it from Wenqi’s cake, i also decided to do some cute little cherub as an accompaniment to the main Angel, which was to represent Joy, and of course the usual boatload of lots of clouds all around the cake

In addition to the cake, Joy also requested for a batch of cupcakes featuring 3 cherubs, 3 roses, and 3 dogs. The dog was to represent her little faithful companion

Anyway to make sure i could do up the main angel to look like Joy, Joy sent me a picture of herself and her dogs for me to see. I realise now that modelling a figure after someone specifically is actually really hard to do.. but i do hope that i succeeded at getting the angel to look just a little like Joy. Anyway.. her’s some other close up shots of the cherubs on the cake



As you can see, i decided to do all the cherubs in different positions for both the cake and the cupcake toppers. My favourite of all the cherubs on the cake, had to be the one with his tongue sticking out and making a monkey face. For the cherub cupcakes, my favourite was the one that was taking a snooze
Don’t you think they’re just so cute?!



Anyway, here’s a shout out to Joy wishing her a very Happy 21st Birthday and i do hope that she liked the cakes and cupcakes

Wenqi’s friend Valerie contacted me soon after Wenqi’s birthday saying that she loved the cake i did for Wenqi and was wondering if i could make a cake for her birthday as well. I was ecstatic upon hearing this and told Valerie that of course i would be delighted to do her cake.

On our first discussion Valerie told me that she would really really love if i could do a cake with all the soot sprites/ soot balls as she loved them. Unfortunately after some discussion we agreed that visually if the cake was full of soot sprites it may not look very visually attractive. So we decided to go with her pyjama themed party to come up with cake ideas.

The initial idea we came up with was to do a girl in pyjamas with sheep around.. i.e. counting sheep.. but Valerie being the zany and off the wall girl that she is decided to that she wanted cows instead of sheep.. haha..
It was a zany idea.. but hey.. it’s cute right
So we finally decided on doing a 9″ chocolate cake filled with chocolate buttercream and covered with fondant. The cake would be topped with a little girl in pyjamas holding a soot sprite and having cows surround her.

I thought this cake turned out fabulous and i was very very happy with the way the girl figurine came out considering it’s only my 3rd attempt at making a human figurine. I could see Valerie was very happy with the cake when she collected it and her surprised and happy exclamation made my day
Happy birthday once again Valerie and thanks for giving me the opportunity to do the cake. It was great fun!!

Yan Xin and Peixin’s cousin’s girlfriend, Wenqi called me the other day asking if i could do a devil and angel themed cake and cupcakes for her 21st birthday. Yan Xin had ordered some birthday cupcakes from me for Peixin the other day so it was great to have an opportunity to make a cake for Wenqi :)
As it was Wenqi’s 21st birthday and hey… everyone only turns 21 right… she wanted a special birthday cake and some cupcakes to go with the cake.
I was super excited when i got the call as this would be my first official cake order for me!! Yay!!

You would think that a devil and angel themed cake should be pretty easy to do right? Wrong!!! Trying to combine both a devil and angel on the cake was quite tough considering that Wenqi didn’t want too big a cake as the cake would be eaten only after a heavy dinner and would only be for about 15-20 “not very hungry people”. So.. doing a 2 tier cake was out of the question, leaving me with the problem of coming up with an idea as to how to combine both the devil and angel on a single cake. :p I decided to surf the net to see if i could find any ideas and whether it would get my creative juices flowing… conclusion… I COULDN’T FIND ANYTHING!!! ARGGHHH…

So after thinking long and hard, i decided the best would be to decorate the cake in 2 halves. A half for the angel theme and the other for the devil themed. As Wenqi also loved my 3d cupcakes she requested for some figurines to go on her cake as well.. so of course i had to do a devil and an angel to go on her cake
As to how to arrange them, well.. i decided to make them sitting with their backs facing each other and decorating the respective side of the cake with their individual themes. For the devil side, i decided to decorate it with some chocolate pebbles and piping on some frosting in red and yellow to resemble fire. The angel side on the other hand would be decorated with some clouds and stars. This way, i could carry through both the stars and clouds to the angel themed cupcakes and the fire frosting to the devil themed cupcakes. So after finalising the cake design with Wenqi.. i excitedly started on the figurines for the cake. To give more dimensions to the stars as well as the figurines, i bought some edible glitter and brushed on the glitters onto the stars, and figurines.. i thought they worked out great and they looked great too!!!

To tell the truth, as this was my first official cake order, there were some moments where i was afraid that there would be some huge unforseen disaster that would cause me to not be able to deliver the cake to Wenqi on time… that would be a total disaster.. and on her birthday too!!! Yikes… i tell you.. i was having nightmares the night before the cake was due worried about all the things that could go wrong!!

Well.. in the end, i did encounter some problems such as my fondant cracking or sticking to the sheet everytime i tried rolling out the fondant large enough to cover the cake.. then the problem of joining the 2 different colours of fondant together that was suppose to represent the devil and angel side of the cake. In the end, i had to throw away my whole fondant and remake a new batch of fodant which luckily it worked out much better.

In the end everything worked out great… although my little pitchforks on the cupcakes did disintegrate due to the high humidity on the day of collection
I think i will have to reinforce my thinner fondant creations in future if i need them to hold firm without support. Sigh.. i hate how the humidity here affects my fondant creations. Wenqi though was super understanding about the humidity problem.. and even though i had to remove the pitchforks from the cupcakes, i think the devil cupcakes were still gorgeous without them. Wenqi was also very happy when she collected the cakes and cupcakes. So overall everything was great.
Happy 21st birthday Wenqi!!! Hope you had a great 21st birthday!!
Oh and for those interested, the cake was a chocolate cake filled and frosted with chocolate buttercream filling then covered in fondant. The angel cupcakes were made with nutella swirled cupcakes and the devil cupcakes were made with my low fat healthy strawberry cupcakes

Well…. this is my 2nd attempt at making another birthday cake.. if you recall my previous attempt was for my hubby’s birthday a couple of months back
My MIL’s favourite cake is actually chestnut or walnut cakes.. but alas… i couldn’t really find a good recipe for chestnut cakes and i had no walnuts on hand… so i made her next favourite cake which was a coffee cake. I had found a espresso coffee cake recipe sometime back which i was dying to try and this was the perfect opportunity. In addition, this coffee cake had no butter or oil… so it’s a healthier alternative to most other cakes. Perfect!

I frosted the finished cake with chocolate espresso buttercream which tasted gorgeous and topped off the finished cake with 3 hand made edible fondant roses i had made slightly earlier. For added decoration, i added some leaves to finish it off.
