My first fondant covered pooh test cake….

I’ve been getting quite a few requests to make cakes recently.. but I’ve always shyed away from agreeing as i always think that my cake decorating skills are not up to par yet. Thus to date, i’ve only made cakes for my close family members. However, with the encouragement of my hubby and family members i finally decided to do a test cake to see if i could do a really beautiful cake.

I’ve always loved fondant covered cakes as i think they always look so professional and smooth… however, i was always hesistant to try covering a cake with fondant as i was worried about whether i could get it smooth and whether i’d get the problems that everyone seems to get such as wrinkly skin, bubbles under the fondant and well.. not being able to get the fondant smooth! I finally decided to try making one and decided to make a tiny 6″ cake just to see if i could do it. Hee.. lucky for me too that the cake would be just in time for our 1st wedding anniversary as well :p

I made a deliciously rich and sinful tasting butter cake that was super moist and yet had a beautiful crumb. This cake is unbelievable and i couldn’t stop eating the cake bits that i had to cut off after the cake was baked. My hubby was also hanging over my shoulder and after the first bite he finished off all the other bits that were cut off. Goes to show how good the cake tasted!

Well.. i frosted the cake and after that laid the fondant over everything and smoothed it down. I was very worried about the fondant tearing during the process but surprisingly the cake actually turned out quite nicely for a first attempt anyway :)

I’ve also cut a piece of the cake out just to show you how beautiful the cake crumb looks.. i’m just hoping you can see it from the picture :) Doesn’t it look delicious?!

Ok ok.. i know.. many of you are probably thinking.. hmm.. isn’t this suppose to be a wedding anniversary cake for myself.. and isn’t the theme a bit off… haha.. yeah but i did want something cute so.. hee too bad for hubby :) Anyway.. i don’t he really bothers about the decorations on the cake so long as the cake itself is yummy.. haha :o ) so everyone’s happy :)

Ji Dan Gao…

I had a craving for Ji Dan Gao or “egg cake” the other day… and well after being haunted by the delicious eggy and sweet flavour of the Ji Dan Gao, i just couldn’t stand it any more and decided to roll up my sleeves and make the steamed Ji Dan Gao.

As the name implies.. this cake is made mainly using eggs… and although its got no butter or oil… its a really unbelievably moist cake with a nice crumb to it. Hmm… maybe the reason behind its moistness comes from the fact that its steamed rather than baked :)

Well.. here’s a look at the batter… look how creamy and fluffy the batter looks :) I’ve also included a picture of the completed cake. Rightfully the cake should “smile” or crack at the top and open up like a flower… mine however instead of cracking open like a flower ended up having a wide crack down the middle of the cake and cracking open from the side instead.. haha… oh well… it still tasted delicious and was so yummy and moist! Really helped to satisfy my craving for this cake and bringing back fond childhood memories when i used to eat this yummy cake.

Simple and sweet vanilla and strawberry cupcakes with buttercream frosting..

I got a request yesterday for some vanilla and strawberry cupcakes with vanilla and strawberry buttercream frosting from Mr Eng :)

As the butter taste of the buttercream frosting is quite strong i decided to cut down on the butter used in the vanilla and strawberry cupcakes so that the butter taste would not overwhelm the tastebuds.

I was quite happy with the modified cupcake recipe as the cupcakes turned out very nice and moist and yet fluffy… :) Plus it’s so much healthier than other cupcakes since i used much less butter and replaced it with yogurt instead so that the cupcake would retain it’s moistness… that is if you discount the butter in the buttercream frosting :p

Birthday cake i made for my MIL…. :p

Well…. this is my 2nd attempt at making another birthday cake.. if you recall my previous attempt was for my hubby’s birthday a couple of months back :)

My MIL’s favourite cake is actually chestnut or walnut cakes.. but alas… i couldn’t really find a good recipe for chestnut cakes and i had no walnuts on hand… so i made her next favourite cake which was a coffee cake. I had found a espresso coffee cake recipe sometime back which i was dying to try and this was the perfect opportunity. In addition, this coffee cake had no butter or oil… so it’s a healthier alternative to most other cakes. Perfect! :)

I frosted the finished cake with chocolate espresso buttercream which tasted gorgeous and topped off the finished cake with 3 hand made edible fondant roses i had made slightly earlier. For added decoration, i added some leaves to finish it off.

Spotty dog and bear cupcakes…

First off.. thanks Aizhen for recommending my cupcakes to Debbie :) Debbie had given me a call the other day asking if i could do some cupcakes for her. She wanted some doggy cupcakes and some bear cupcakes with the words LINA on it… plus the special request of making the cupcakes as colourful as possible :)

Well… to change things around a bit, i decided to change the look of my doggies and decided to make some black and white spotted doggies.. as for the bears.. well.. i can’t change it up too much and they look pretty cute as they are so decided to leave them as they are.

My favourite of all the cupcakes i made in this set was the little black and white spotted doggy that was fast asleep… he looked so adorable that i really wanted to keep him.. but of course i can’t right :p Don’t you think he’s just super cute…

Chewy chocolate peanut butter explosion cookies!!!

As mentioned in my previous post, i promised that i would post up some pictures of a chocolate and peanut butter cookie today… well.. as promised here it is!!! Doesn’t the cookie look delicious!!

To tell the truth, when i read the reviews about this cookie i was a bit sceptical about how great it would taste.. but after the first bite of these fellas.. i was in heaven!!! These cookies were fantastic!! As with the name of the cookie, with every bite, the initial taste of chocolate would explode onto your taste buds followed by the distinct and ooo so creamy taste of peanut butter…. these chewy cookies were so fantastic that i couldn’t stop eating at 1 and i have to say… i scarfed down nearly half the batch i made at one sitting… :p

Anyway, i just have to say that these cookies were fantastic and truly lived up to all the hype about it! Give me these cookies any day of the week!!!

Bear cupcakes for a 19th birthday

This was the last cupcake i had left for today after a very busy week of soccer themed cupcakesbeagle cupcakes and pooh and doraemon cupcakes.

The request was for 9, 6cm diameter cupcakes with individual bear toppers with the words Happy 19th on it :) Although i’ve done these bears a few times i have to say i’m never sick of doing them as there is always the challenge of thinking of new ways to give the little bears different expressions. As the bears have to hold the letters there isn’t much i am able to change for the bears position…. so everything really falls on the bears expressions. I hope i’ve succeded in this latest batch of bear cupcakes by giving them each different expressions :)

As for what’s coming up next on my posting… well.. i’m hoping to make this gorgeous recipe i found for peanut butter cookies wrapped in chocolate… i mean what’s a better pairing than peanut butter and chocolate right… for me.. this recipe looked and sounded delicious and i can’t wait to try my hand at it.. so look out for my next post for some tempting treats! :)

Another request for pooh n friends cupcakes with doraemon thrown in for good measure… :)

This is my 2nd take on pooh and friends cupcakes :) This special request came from Shawna who wanted 20 cupcakes with Pooh, Tigger and Piglet as toppers… and 5 doraemon toppers as well! :)

Woohoo…. something new for me to try out. I always remembered watching Doraemon cartoons when i was small with him pulling out all sorts of gadgets from his pouch :) Well.. this request finally gave me the opportunity to try and model Doraemon using fondant!! Is this cool or what…

Well… these are a collection of pictures i took of the indivual cupcakes and the toppers.. hee hee.. see the pooh with the little bee that has flown onto his hand.. isn’t it cute!! I think this bee is the smallest bee i have ever done! I think it’s not even 0.5cm big. I also like the little pooh that is snoring away.. i think he’s my favourite among all the toppers :) What’s your favourite??

Simple 2nd anniversary cupcakes…

Malique called me the other day asking if i could do some simple cupcakes for him for his 2nd anniversary. He wanted a simply frosted cupcake with a blue 2.

I added some heart shaped sprinkles to brighten the cupcakes up. Here is a quick pic. that i took for it before Malique collected the cupcakes :)

Soccer themed cupcakes….

This was a special request for a manchester united soccer themed cupcake to celebrate a guy’s 30th Birthday…. as is obvious from the theme of the cupcakes.. he must be a Manchester United fan :)

Its actually my first time doing up these soccer cupcakes.. and i have to say it was quite fun to make! :) The girl had requested that the words Happy 30 Birthday to be piped onto the soccer jerseys. However, as most soccer jersey’s only have numbers and words on the back of the jersey, i actually copied the back of the jersey instead of the front.. so i have a feeling no one will know its actually a Man. U jersey.. arrgghh.. learning point: make sure to copy the front of the jerseys next time!! :p
